Manda’s Fit Muffins

Peanut Butter & Banana Fit Muffins:

  • -2 Ripe Bananas, mashed
  • -3 Cups Oat Flour (Rolled Oats ground up in a food processor or blender)
  • -1/2 tsp Baking Powder
  • -1/2 tsp Baking Soda
  • -1/3 Cup Truvia Baking Blend
  • -Pinch of Salt
  • -2 Scoops Vanilla Protein Powder
  • -1/2 Cup PB2 or PB FIT
  • -1 Egg
  • -1/2 Cup Cottage Cheese
  • -1/2 tsp Vanilla Extract
  • -4 Tbsp Unsweetened Applesauce
  • -3/4 Cup Milk of Choice

Preheat oven to 375.

In mixing bowl, combine mashed banana, oat flour, PB2, baking powder, baking soda, Truvia, protein powder, and salt. Sit aside. Blend together egg, vanilla, cottage cheese, milk, and applesauce. Pour onto dry ingredients and stir together. Mix well, batter will be thick.

Pour by 1/3 cupfuls into prepared standard muffin tin. Bake 20 minuets.

Store in refrigerator in an airtight container. Heat 25 seconds before eating.

Sweet Potato Snickerdoodle Fit Muffins:

  • -3 Cups Oat Flour (Rolled Oats ground up in a food processor or blender)
  • -1 Cup Fresh Sweet Potato
  • -1/2 tsp Baking Powder
  • -1/2 tsp Baking Soda
  • -1/3 Cup Truvia Baking Blend
  • -Pinch of Salt
  • -3/4 tsp ground cinnamon
  • -1/2 tsp ground ginger
  • -1/4 tsp ground nutmeg
  • -2 Scoops Vanilla Protein Powder
  • -1 Egg
  • -1/2 Cup Cottage Cheese
  • -1/2 tsp Vanilla Extract
  • -2 Tbsp Unsweetened Applesauce
  • -3/4 Cup Milk of Choice

Topping

  • -1/3 Cup Truvia Brown Sugar Blend
  • -1 tsp Ground Cinnamon
  • Preheat oven to 375.

In mixing bowl, combine oat flour spices, baking powder, baking soda, Truvia, protein powder, and salt. Sit aside. Blend together egg, vanilla, cottage cheese, milk, sweet potato, and applesauce. Pour onto dry ingredients and stir together. Mix well, batter will be thick.

Pour by 1/3 cupfuls into prepared standard muffin tin.

In a separate bowl, combine Truvia Brown Sugar Blend and 1tsp ground cinnamon. Sprinkle evenly over muffins.

Bake 20 minuets.

Store in refrigerator in an airtight container. Heat 25 seconds before eating.

Pour by 1/3 cupfuls into prepared standard muffin tin. Bake 20 minuets.

  • 3 Cups Oat Flour
  • 3/4 tsp Baking Powder
  • 3/4 tsp Baking Soda
  • 1/2 cup Truvia Baking Blend

  • Pinch of Salt
  • 1 Egg
  • 1/2 tsp Vanilla Extract

  • 1 Tbsp Lemon Zest
  • The Juice of 1 Lemon
  • 1/4 Cup Chia Seeds
  • 1 Small Container of Fresh Blueberries

Preheat oven to 375.

In a mixing bowl, combine oat flour, baking powder, baking soda, Truvia, protein powder, and salt. Set aside.

Blend together cottage cheese, vanilla extract, milk, egg, and applesauce until smooth. Pour into dry ingredients add stir.

Mix in lemon juice and lemon zest., then fold in blueberries and chia seeds.

Batter will be thick.

Pour by 1/3 cupfuls into prepared standard muffin tin.

Bake at 375 for 20 min.

Yields 12 standard muffins.

Pour onto dry ingredients and mix well. Batter will be thick. Fold in fresh apples and walnuts. Pour by 1/3 capfuls into prepaid muffin tin. In a separate bowl, combine 1/4 cup coconut flour, 1/4 cup Truvia Brown Sugar with 2 tsp of cinnamon and melted butter. Sprinkle onto muffins.

Bake 20 minuets, or until a toothpick comes out clean.
